Sometimes, it is not about photography…

Today, I have decided to talk about something different than photography and to talk about my friend’s company that is in the process of starting up. I won’t give any timeframe in case I jinx it.

“La Boucaneri d’Henri” (Henry’s smoke house), is a business project to produce hot smoked salmon, traditionally and ancestrally, which Josée Harbour is the founder/soon owner. Josée’s family has been making hot smoked salmon, from an age-old family recipe, since two generations. Her grand father had a hot smoke house in Québec’s North Shore Region and Josée is smoking salmon for her personal use for many years now. I had the absolute pleasure to try it twice and it is really, REALLY, good. My lovely husband who is not a fan of fish is asking for more. I am therefore really looking forward for the start of the commercial production so I can finally buy some. :)

Although the “Boucanerie” is not open yet, the project is moving apace, maybe not as fast as Josée would like, but hey… It is a very nice project that I am happy to support a wee bit with my computer knowledge and I wish her every success in this project.
